This is a traditional Lebanese spinach fatayer recipe, it’s fried this time in vegetable oil, crispy and tasty 😋

Step 1
To prepare the dough, Combine all of the ingredients in a large bowl and knead 5-7 minutes or until a smooth ball of dough is formed adding a little flour if the dough is too sticky, cover and set aside for 1 hour to rest.
Step 2
To prepare the filling, combine the chopped onion and olive oil in a large skillet, cook over medium heat about 3 minutes until soft, add the garlic stir for 30 seconds, then add chopped spinach, season with salt and pepper and cook over medium high heat until the spinach wilts (3 to 4 mins), stir in the sumac, taste and adjust seasoning, set aside to cool completely.
Step 3
Spread the dough on a hard surface and cut into medium size circles (8 to 10 cm) Put a little filling in the center, pick up two sides of the round dough and close them together then close the back part to form a triangle like shape. (Make sure you pinch the edges very well to seal it and prevent it from opening), pierce 3 holes on the top layer of dough so that steam releases while frying to prevent them from bursting open, repeat the process for all the remaining dough.
Step 4
Heat the oil in a frying pan and fry the fatayer for 2 to 3 minutes per side or until they change color to golden brownish, then remove to a plate lined with paper towels and serve.
