Step 1
Start by chopping the green bell pepper and the Brussels sprouts into small cubes and thin slices respectively. Add the olive oil to a pan and bring it to medium heat.
Step 2
Add the pepper + sprouts to the pan as well as the salt and cumin + coriander. While that cooks slice the garlic thinly.
Step 3
After 3-4 minutes (once the pepper and sprouts are getting softer) add the garlic and spinach and cook down until the spinach is completely cooked.
Step 4
Add some water if too dry and make three well in the pan for the eggs. Add one egg into each well and some optional black pepper on top. Cook for 5 minutes covered with a lid.
Step 5
Serve and eat with some bread straight from the pan after having garnished with parsley, green onion and feta
