Instructions
Step 1
Preheat oven to 450F.

Step 2
In a medium bowl, gently massage cucumbers + sugar + salt for 1-2 minutes until sugar is dissolved and cucumbers begin to release juice.
Step 3
Add vinegar and toss to coat. Set aside to pickle.
Step 4
In a large non-stick pan on med-high, cook onions + pork + sugar for 4-6 minutes, until pork is cooked through.
Step 5
While pork is cooking, combine mayonnaise + sriracha + water and set aside.
Step 6
Remove pan with pork from heat, then stir in carrots + soy sauce + hoisin.
Step 7
Brush flatbreads with oil, then toast on middle rack of oven for 6-8 minutes.
Step 8
Top flatbreads with pork + pickled cucumbers. Cut into wedges then drizzle with sriracha mayo and serve.
