Ingredients
4 servings

3 tablespoonslemon juice
freshly squeezed

1 sprigfresh thyme

2 sprigsfresh rosemary
broken in half

1clove garlic
crushed

¼ cupolive oil

1 teaspoonolive oil

2 tablespoonssherry vinegar
or mild white vinegar

freshly ground black pepper

4tuna steaks
1 inch thick
Tomato Bread Salad

3 slicescountry bread
1/2-inch-thick, cut into 1/4-inch cubes

2 cupstomatoes
1/2-inch wedges, ripe, about large tomatoes

1 cupcucumbers
peeled, seeded, and cubed

2 tablespoonsfresh basil leaves
chopped

¼ teaspoonfresh oregano leaves
chopped

2 tablespoonsextra virgin olive oil

0.5red onion
diced

2 tablespoonsbalsamic vinegar

12Gaeta olives
or kalamata, pitted

kosher salt

freshly ground black pepper
Instructions
Step 1
In a shallow dish large enough to hold all the tuna steaks in a single layer, mix the lemon juice, thyme, rosemary, garlic, ¼ cup of the olive oil, vinegar, and pepper to taste.
Step 2
Add the tuna and coat with the marinade on both sides.
Step 3
Marinate the tuna at room temperature for at least 30 minutes but no more than 2 hours.
Step 4
To make the salad, preheat the oven to 300° F. Place the bread cubes on a baking sheet and bake, stirring occasionally, until dry, about 8 minutes.
Step 5
Do not brown. Set aside.
Step 6
In a large bowl, stir the tomato wedges, cucumbers, and salt and pepper to taste, basil,
oregano, extra virgin olive oil, and onion.
Step 7
Set aside for 30 minutes.
Step 8
Wipe a large cast-iron or nonstick skillet with the remaining 1 teaspoon olive oil and set over medium-high heat.
Step 9
When the skillet is hot, add the tuna and sear on both sides, about 1 minute per side for rare or 2 minutes per side for medium-rare.
Step 10
Add the bread cubes, vinegar, and olives to the tomato salad.
Step 11
Toss, and serve immediately with the tuna.
