Instructions
Step 1
Cook rice


Prep
Step 2
Cut chicken into 1/2" strips



Step 3
Chop onion, mince garlic, and prep peas and carrots (thaw or wash and chop)

Heat 10" skillet on medium-high heat

Sprinkle pepper on chicken and cook on skillet

Transfer chicken to plate

Add butter to skillet and melt. Add onions to skillet and cook (~2 minutes)

Add garlic. Stir in and cook ~1 minute

Add rice and cook for about 30 seconds

Push rice, onions, and garlic to the sides of the skillet. Add egg to center and scramble it there. When the egg is almost completely cooked, stir in the rice and onion mixture

Add peas and carrots to skillet and stir constantly for about 1 minute




Step 12
Add chicken back to skillet and mix, then stir in soy sauce




Step 13
Scoop into medium bowl and serve
