Step 1
Cook the bacon ahead of time on parchment lined sheet pans at 300°F for 25-30 minutes. Rotate the pans halfway through cooking to brown evenly.
Step 2
Remove bacon from pans while hot and drain oil.
Step 3
Whip the eggs and heavy cream with salt and pepper to taste. Cook as a large omelet and cut into 8 equal pieces.
Step 4
Toast the bagels, then add 1 piece egg, 2 slices bacon, 1 slice cheese to each bagel. Warm through to melt the cheese and serve.
