Instructions
Step 1
Prepare frozen French fries according to package instructions.

(My preferred method is the air fryer, which requires a few batches, and can be inconvenient if short on time.)

You can also fry them until crispy and golden or bake them in a single layer on a large metal rimmed baking sheet on 450 degrees until crispy, about 30 to 35 minutes.

Once they're cooked, sprinkle kosher salt to taste.

Place all the chili ingredients into a mediumsized saucepan.

Mix well and cook over medium heat for 10 minutes.
Step 7
To assemble, place hot vegetarian chili over crispy French fries and top with shredded cheese.

If you notice the cheese isn't melting you can pop it into a 350-degree oven for a few minutes.
Step 9
Drizzle with mayonnaise and garnish with scallions.
Step 10
Serve immediately.
