Ingredients
6 servings
½ cupAdzuki beans
soaked overnight
½ cupbrown lentils
washed
½ cupbrown rice
washed
2celery sticks
chopped
3carrots
medium, chopped
1onion
large, chopped
0.5leek
white, part chopped
2 Tbsptomato paste
1can chopped tomatoes
1 literveggie stock
300 grammushrooms
any sliced
3bay leaf
2 tspsweet paprika
1 tspcumin
2 tspcoriander powder
fresh cracked pepper
salt
to taste
5garlic gloves
crushed
2 Tbspolive oil
Instructions
Step 1
In a large pot add the oil, onion, carrots, celery, leek and garlic to sautee for 2-3 minutes over medium high heat.
Step 2
Add the tomato paste, bay leaf and spices and stir or another minute.
Step 3
Add the lentils, beans, chopped tomatoes, stock. Cover the pot and bring to gentle boil for 45 minutes. Monitor and add water if needed.
Step 4
After 45 minutes passed then add the brown rice and cook for another 30 minutes or untill the rice, beans and lentils are soft and the liquid has thickened. Salt to taste.
Step 5
Add the mushrooms and shimmer for another 10 minutes.
Step 6
Serve with some crumbled feta and parsley.
