Step 1
Blend the oats, egg whites, cottage cheese, vanilla, sweetener, and pumpkin spice.
Step 2
Add 1/3 c of the batter to a greased mini waffle maker or griddle for pancakes.
Step 3
The batter will yield about 6 mini waffles. Add toppings of choice and enjoy! This recipe is also meal prep friendly.
