Ingredients
4 servings

20 mlsextra virgin olive oil

700 gmsvegan chicken

1brown onion
diced

1garlic clove
crushed

1green capsicum
finely chopped

200 gmsbaby spinach

80 gmscheddar cheese
shredded

4wholegrain tortillas

1 tspsweet paprika

½ tspground coriander

½ tspground cumin

¼ tspchilli powder

1 sprinklepepper

1 sprinklesalt

¼ tspdried oregano
Instructions
Step 1
Mix spices together for spice mix
Preheat oven to 180°C







Step 2
Coat chicken with mexican spice mix, patting into flesh well, cover and keep chilled until time to cook.

Step 3
In a large pan, heat oil over medium heat. Add the onion, garlic and capsicum and cook until soft.




Step 4
Line a tray with baking paper. Add the marinated strips of chicken to the baking tray and bake until golden, approximately 15 minutes.
Step 5
Divide the salad, cheese, wraps and chicken ingredients into 4 seperate air tight containers to store for the weeks lunches.



Step 6
Assemble chicken, cheese and salad wrap daily for best results.
