Instructions

Step 1
Mix spices together for spice mix Preheat oven to 180°C

ground corianderground coriander½ tsp
ground cuminground cumin½ tsp

saltsalt1 sprinkle
dried oreganodried oregano¼ tsp
Step 2
Coat chicken with mexican spice mix, patting into flesh well, cover and keep chilled until time to cook.

In a large pan, heat oil over medium heat. Add the onion, garlic and capsicum and cook until soft.

Line a tray with baking paper. Add the marinated strips of chicken to the baking tray and bake until golden, approximately 15 minutes.
Step 5
Divide the salad, cheese, wraps and chicken ingredients into 4 seperate air tight containers to store for the weeks lunches.
