Cauliflower Fried Rice

An easy weeknight meal that can be served alone or with Tofu Katsu. What's great about this recipe, you can make it your own. Put in your favorite vegetables, add a little or as much heat as you like, or crisp up some tofu to make it a little heartier.

Ingredients
4 servings
½ Tbsolive oil
½ Tbssesame oil
0.5red onion
diced
0.5red pepper
diced
¼ cupgreen onions
whites only, save the greens for garnish, chopped
1carrot
diced
2celery ribs
diced
1 pkgfrozen cauliflower rice
½ cupfrozen peas
½ cupfrozen shelled edamame
1 cupfrozen chopped kale
or spinach
Sauce
Instructions
Step 1
First make the sauce by adding all the ingredients under sauce to a food processor and blend together. Put to the side. As you add in each vegetable, add a tablespoon of sauce.
Step 2
In a wok our frying pan, coat bottom with oils, and heat to medium heat. Start with onions, and saute until soft, then add in the red peppers and green onions. Saute for 2 mins, and add in the celery and carrots . Once vegetable have soften slightly pour in the cauliflower rice.
Step 3
Let cook for 5 mins. Add the remaining sauce, peas, edamame and kale. Cook for 3 to 5 minutes, and serve.
Step 4
Garnish with green onions, cilantro, and/or sesame seeds.
