Morning Glory Stir Fry

Now I have to put a disclaimer here because this isn't "true" morning glory. Unfortunately it is illegal to make in the US due to the fact that the main ingredient, water spinach, is banned in the US.
I have found that the best replacement for water spinach is sweet potato leaves. You can find these at your local asian market in the produce section. These long stemmed leaves make a great substitute and have a very similar texture.
Overall this is a quick stir fry recipe that takes less than 15 minutes and is absolutely delicious! I also don't own a wok, so the next best pan to use is a cast iron.

Step 1
Cut your sweet potato leaves into thirds. You should have a bunch of just stems, some stems with leaves and only leaves.

Heat a wok or cast iron pan over medium high heat. Then drizzle in your oil.

Add your chopped garlic and stir for 20 seconds. Then add in the chilis and toss for a few seconds.

Add your sweet potato leaves and toss it well. I started by adding the stems first (these take the longest to cook), followed by the mixed pieces and then finished with the leaves.
Step 5
Pour in your oyster sauce, soy sauce, and sugar. Toss together for another 1-2 minutes.

Turn the heat off and add to a plate to enjoy!
