6 ozparmesan cheese
1 Tbspmiso paste
all kinds of miso works
¼ cuppasta water
2 Tbspbutter
1 tspfreshly cracked black pepper

Instructions
Step 1
In a separate bowl, mix together the parmesan cheese, hot pasta water and miso paste until well combined. Set this aside.

Step 2
Cook your pasta according to directions in salted water. Reserve the pasta water for the sauce.

In a pan, melt the butter and add in the black pepper. Allow for the black pepper to cook (“bloom”) over low heat for ~2-3 mins (until fragrant) and then turn off the heat to avoid burning the black pepper.

Step 4
Toss in your pasta and miso cheese mixture. Add in about 1/4 cup of pasta water and toss until the sauce becomes glossy and smooth. If the sauce isn’t coming together and there is too much liquid, turn on the heat to low and allow for the pasta to warm up. If it is too dry, add more pasta water.
