DEVILED CHICKEN
Recipe from Joyce Parry.
If using regular wine, you may want add some salt. The Holland House cooking wine is already seasoned.

Instructions
Step 1
Butter lightly or spray pan to prevent chicken from sticking.
Step 2
While butter melts, clean chicken, pat it dry, and place it (skin side down) in large shallow pan.
Step 3
Place pan about 6" below broiler and broil about 5 minutes on each side. (Susan's note: I skip this step if I'm using skinless chicken.)
Step 4
Stir 2 Tbsp. Butter into crumbs.
Step 5
Put Worcestershire sauce and sherry in the other 4 Tbsp. Butter.
Step 6
Spread the liquid mix over chicken; top with crumbs. Bake uncovered, 350 degrees, 50-60 minutes.
Step 7
Small potatoes may be roasted with the chicken.
