Chicken Omelette — Low Carb Love™

This is a super simple and quick low carb breakfast idea! Top it off with some avocado and salsa and you’re good to go!

¼ cupshredded rotisserie chicken
2 Tbspbell peppers
2 tbsp onion, diced
2 Tbsponion

0.5roma tomato
diced
Salt and pepper to taste

Instructions

Step 1
In a medium skillet, add avocado oil, onions, bell peppers and tomato into the pan.
Step 2
Saute until soft, add your chicken and saute until golden brown.
Step 3
Add your scrambled eggs, and cook for about 1-2 mins on each side. Flip once the first side is done!
Step 4
Serve with a homemade salsa, avocado or top with cheese.
