Ingredients

1 bottledark beer
opted or stout
2white onions
chopped
1green bell pepper
chopped
1red bell pepper
chopped
1can diced green chili
½ teaspoonsalt
¼ teaspooncayenne pepper
2 poundsground chuck
1 tablespoonchili powder
2 teaspoonground cumin
1 teaspooncrushed red pepper
2 teaspoondried oregano
4 clovesgarlic
crushed
24 ouncescrushed tomatoes
¼ cuptomatoe paste
2 cupsbeef broth
30 ounceschili beans
2 tablespoonscorn meal
4 tablespoonswater
1 bagtortilla chips
1 ½ cupsgrated Monterey Jack cheese
6 tablespoonssour cream
1 jarjalapeno peppers
Instructions
Step 1
Pour beer into a large Dutch oven and add ground chuck. Turn on heat to medium. Brown meat until no longer pink.
Step 2
Add onions, green pepper, red pepper, and green chili. Continue to cook for 3 to 5 minutes or vegetables start to wilt. Add salt and cayenne pepper.
Step 3
Stir in chili powder, cumin, crushed red pepper, and oregano, continue cooking for 5 to 6 minutes.
Step 4
Stir in garlic, tomatoes, tomato paste, beef broth, and beans. Bring mixture to a boil, then reduce heat to simmer. Simmer the mixture uncovered for 1 hour, stirring occasionally. Skim off fat occasionally.
Step 5
Mix corn meal and water together. Slowly stir in the corn meal slurry and continue to cook for 30 minutes.
Step 6
Place a handful of tortilla chips into each bowl. Spoon chili over chips. Garnish with grated cheese, sour cream and jalapenos.
