Instructions

Step 1
Heat oven to 375F

Season pork generously with salt and pepper you almost want to create a crust on it
Step 3
Transfer pork fat cap facing up into an oven-safe vessel that the pork will not stick out of the top
Step 4
Add seeded serrano, quartered onion, garlic, coke, and milk. The fat cap should just stick out of the liquid and cover the top of the pork with the cilantro

Step 5
Cover with lid or foil well and place in oven for 5 hours check at the 3 hour mark to make sure your liquid has not cooked completely off
Step 6
At the 5 hour mark the pork should fall off the bone transfer to separate container and blitz the remaining liquid and solids add about half the liquid back to the meat the meat should fall apart on it's own
