Step 1
In a pan salute mushrooms, onions, garlic, oregano, coriander on a low heat for 10-15min
Step 2
Once all tender add all the beans a continue to cook for a further 10 minutes.
Step 3
When slightly cooled add ¾ on the mixture to a food processor pulse until chucky but blended mixture and then return to pan.
Step 4
On a low heat mix all the mixture together in the pan allowing the excess fluid to evaporate
Once cooled, place a tablespoon of the mixture on a small baguette croutons and add a teaspoon guacamole, prickle of chives and a rocket
