Instructions
Step 1
Add all the ingredients, except the bread and rocket, to a bowl and toss. Sprinkle salt and pepper to taste and mix well.
Step 2
Allow salad to sit at room temperature and then serve.
Step 3
Serving suggestion: Toast thinly slice crusty bread and top with rocket leaves and a drizzle of balsamic glaze.
