Instructions

Step 1
Preheat the oven to 200°C (fan 180°C/gas mark 6).
Step 2
Place twelve paper muffin cases in a 12-hole muffin tin.
Step 3
Put the mashed bananas, egg, maple syrup and vanilla extract in a large bowl and mix well with a wooden spoon.
Step 4
Sift the flour, cocoa powder and baking powder into the banana mixture and then tip in anything left in the sieve.
Step 5
Mix well with a wooden spoon until completely combined.
Step 6
Divide the mixture between the twelve muffin cases and place the chocolate chips on the top of each muffin.
Step 7
Place in the preheated oven and bake for 20-25 minutes.
Step 8
To check that the muffins are done, insert a sharp knife into the centre.
Step 9
It should come out clean when they're ready.
Step 10
Transfer the muffins to a cooling rack to cool.
