Ingredients
4 servings
1 cupfresh corn kernels
or frozen corn
2 tablespoonsfresh cilantro
chopped
½ teaspoonsalt
½ cupgreen bell pepper
small, chopped
¼ cuponion
small, chopped
1 x 15 ouncescan chili beans in sauce
undrained
1 x 15 ouncescan black beans
rinsed and drained
1 cupcheese blend
Cheddar Jack with jalapeño pepper, shredded
2tomatoes
medium, chopped
½ tspchili powder
4 ozHatch green chilies
Instructions
Step 1
Mix all ingredients except cheese and tomatoes in 12-inch skillet. Heat to boiling; reduce heat. Cover and simmer 5 minutes.
Step 2
Uncover and simmer 5 to 10 minutes, stirring occasionally, until vegetables are tender. Stir in cheese and tomatoes until cheese is melted.
