Instructions

Step 1
Mash bananas until fully masticated. Add eggs and fully incorporate. Next add flour, salt and baking powder. Heat skillet on medium heat with 1 tsp coconut oil. Once heated add pancake batter, 3-4 small pancakes 2”-3” round. Add 2-3 blueberries (or other fruit) to each pancake. Turn after 2-3 minutes and bottom has browned. Then cook for another 1-2 minutes. Remove from pan to plate. Add 1 tsp coconut oil and when heated add more batter and top with blueberries or other fruit. Then make finally batch. Each serving is 3-4 pancakes. If doing meal prep pancakes can be frozen until needed, wrap in wax paper and place in a freezer bag. Can be defrosted then warmed in microwave for 30-60 seconds. Can also warm from frozen just may need to adjust time in microwave.
