Prepare the Ingredients:
Step 1
Beat the eggs in a bowl and season with gochujang, minced garlic, salt and a splash of heavy cream.

If you’re using any additional fillings like ham or vegetables, have them ready to go.

Heat the Pan:

Heat a non-stick skillet over medium heat.
Step 4
Add a small amount of butter or oil to coat the bottom of the pan. Generously sprinkle parmesan cheese over the bottom of the pan.
Step 5
Let the parmesan cheese melt for about 1 minute before pouring the eggs.
Cook the eggs:

Pour the beaten eggs into the heated pan and let them cook for 1-2 mins until they start to set around the edges.
Add the bread:

Place the two slices of bread (or bagel) directly on top of the eggs, pressing down slightly so they stick to the eggs.
Step 8
Let the eggs cook for another 1-2 minutes or so until they are mostly set but still a little runny on top.
Flip the egg and bread:

Carefully flip the entire egg and bread combination over using a spatula, so the bread is now on the bottom and the eggs are on top.
Add the cheese and fillings:

Once the eggs are fully cooked, fold any excess egg around the bread over the bread slices.
Step 11
Customize your sandwich with your preferred fillings. I opted for mozzarella cheese and avocado slices, topped with a drizzle of Japanese mayo and a sprinkle of pre-made spicy seasoning. Place the fillings on either side of the egg where the bagel or bread slice is.

Fold the sandwich:

Fold one slice of bread over the other to form a sandwich.
Cook until golden brown:

Cook the sandwich for an additional minute or two on each side until the bread is golden brown and crispy, and the cheese is melted.

Remove the sandwich from the pan, cut in half if desired, and enjoy immediately.
