Ingredients

3 tbspsghee

1shallot

sea salt

½ cupcoconut aminos

2 tspswhite wine vinegar

1 ¼ tspchipotle chili powder

½ tspsmoked paprika

¼ tspancho chili powder

2 tspssea salt

½ tspblack pepper

2 tspsonion powder

2 lbsbaby back pork ribs
cut into four portions

1red onion
chopped

7garlic cloves
minced

⅓ cuppitted dates
finely chopped
Instructions
Step 1
Combine frozen cherries and ghee in a large sauce pan. Cook over medium high heat and crush the cherries with a potato masher.
Step 2
In a small pan, cook shallots with 1 tsp of ghee and some salt. Cook, stirring for about 5 minutes until shallots are tender.
Step 3
Add the shallots to the pan with the cherries and stir to combine. Once the cherries are tender, add the coconut aminos, vinegar, and spices. Cook, stirring occasionally until the sauce thickens, about 15-20 minutes.
Step 4
In a small bowl, combine the salt, pepper, and onion powder. Rub the ribs with the seasoning and place in a slow cooker bone side down. Pour Cherry Chipotle BBQ sauce over ribs. Add the onion, garlic, and dates.
Step 5
Cook on low for 6-8 hours.
Step 6
Transfer ribs to a foil lined baking sheet. Skim fat from cooking liquid and then spoon some of the liquid over the ribs. Place under broiler and broil for 3-5 minutes.
