Step 1
Preheat oven to 200C(fan)
Step 2
Roughly cut celery, courgette and shallot. Transfer to the ovenproof dish, drizzle with olive oil, add salt, pepper, tarragon and thyme. Give it a good mix, then cut off the bottom of the garlic cloves and place them on top. Cover with the lid or aluminium foil and roast in the preheated oven for 1 hour at 200C (fan)
Step 3
When ready, squeeze the garlic. Mix together vegeta and hot water and add it to the vegetables, followed by 2tbsp yogurt. Purée the soup using a regular or immersion blender.
Step 4
Pass through a fine sieve, add more seasoning if needed and if necessary reheat before serving.
Step 5
Garnish each bowl with goat cheese and enjoy!
