Vietnamese salad with sugar snap and radish, pistachio dressing

Instructions
Step 1
Thinly chop (with food processor) the sugar snaps, radishes and shallots. Add mint. Add chicken in small strips if using
Step 2
Make dressing: mix all ingredients (crushed pistachio and below)
Step 3
Toss the salad with the dressing. Garnish with chopped pistachios and pomegranate. Serve with prawn crackers
