Peel and cut carrots vertically into 4 quarters- leave stems for a natural garnish

Place on a baking dish and massage with the olive oil

Sprinkle salt and pepper

Roast for 30 minutes
For the puree

With a food processor/ blender/ immersion blender add

◦ peas, milk, salt, pepper, paprika, garlic and the sun dried tomatoes

Blend until its creamy

Add a teaspoon of milk at a time if consistency is too thick- This should be an apple sauce consistency
To serve:

On a flat plate- spread puree and top with the yogurt
