Ingredients

2 tspunsalted butter
ghee or olive oil
onion
small, thinly sliced into rings
1garlic clove
smashed
2 lbred cabbage
cored and cut into 1 1/2-inch pieces
1Gala
or Fuji apple, cored and cut into 1/2-inch cubes
½ cupapple cider
unfiltered
½ teaspooncaraway seeds
2allspice
whole, optional, crushed
1 ½ tablespoonsapple-cider vinegar
Instructions
Step 1
Cook onions and garlic in butter in a 12-inch heavy skillet over medium heat, stirring until onions are tender, about 5 minutes. Add cabbage, apple, cider, caraway, allspice (if using), 1 teaspoon salt, and 1/2 teaspoon pepper and cook, covered, stirring occasionally, until cabbage is tender, 15 to 18 minutes.
Step 2
Add vinegar and cook, uncovered, stirring occasionally, until liquid has evaporated, 2 to 3 minutes. Season with salt and pepper.
