This is a hearty white chili or bean soup with chicken. You can make it as mild or as spicy as you like.

Ingredients
8 servings

1 poundchicken breast
or dark meat if you prefer

4 cupsreduced sodium chicken broth

1can green chilies

1can diced jalapeños
if you like it spicy

1 Tbspcumin

1 tspcayenne
optional

1onion
diced

3 stalkscelery
sliced thin
4cans of great northern beans

1 cupwater
1can rotor tomatoes with chilies
Optional

1 tspolive oil

2 clovesgarlic
chopped

salt
to taste

pepper
to taste

Monterey cheese
Garnish with

salsa

sour cream
Instructions
Step 1
Bake or grill chicken, then shred. This can be done ahead of time if you are meal prepping.
Step 2
Add olive oil to stock pot and sauté onions and celery until softened
Step 3
Begin adding other ingredients and simmer for 20 minutes
Step 4
Taste it along the way so you know if you need to go up or down on spice.
Step 5
Garnish with cheese, salsa, cilantro, sour cream- whatever you like
