A burrito filled with Tandoori Chicken, Shish Kebab, and Onion Bhajis, with some mango chutney, Bombay mix, and homemade coriander and mint green chutney

Instructions

The Chicken

Step 1
Crush the garlic and grate the ginger on a microplane

Slice the Chicken thighs in half
Step 3
Add all the ingredients to a bowl and thoroughly combine

Cover with cling film and leave in the fridge overnight

The Shish Kebab

Step 5
Finely mince the onion, garlic, and coriander and put in a bowl
Step 6
Add the lamb mince and spices, and squeeze the lime juice into it and mix through

Cover with cling film and leave in the fridge overnight

The Onion Bhaji

Finely slice the onion into both rings and strips

Finely slice the chilli and coriander

Add everything into a bowl snd thoroughly mix through

Heat an inch of oil in a saucepan

Split up the mix into 8 and form each into a rough ball using your hands, and drop them into the oil

Fry the onion bhajis on medium heat for 3-5 minutes a side until crispy and golden brown

Drain onto kitchen paper ready for reheating

The Green Chutney

Add all the ingredients to a blender and blend for 5 minutes until smooth

To Cook and Assemble

Fire up the BBQ

Skewer up the chicken

Skewer up the lamb. Use your hands to press it into the skewer going all the way down. You want it to be less than 3 cm wide

Grill the chicken and shish kebabs on medium heat for a few minutes a side until cooked through and charred.

Wrap the onion bhajis up in foil and reheat these on the bbq too.

Lay down the fillings across the 4 wraps with the mango and green chutneys and Bombay mix

Fold the sides and wrap it up

Seal seam side down in a griddle pan before toasting off all the other sides.

Slice open and top with more mango and green chutney
