Instructions
Step 1
1. In a bowl, mix the minced chipotle peppers, garlic, cumin, chili powder, oregano, salt, pepper, and olive oil to create a marinade.

2. Cut the chicken breasts into small strips or cubes and place them in a resealable plastic bag. Pour the marinade over the chicken, seal the bag, and massage to coat the chicken evenly. Marinate in the refrigerator for at least 30 minutes.

3. Heat a skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes until fully cooked and slightly charred.

4. Pour in the chicken broth and simmer for an additional 2-3 minutes until the sauce thickens and coats the chicken.

5. Warm the tortillas in a separate skillet or microwave.

6. Assemble the tacos by placing a scoop of the chipotle chicken onto each tortilla. Top with diced onions, avocado slices, cilantro, and a squeeze of lime juice.
