16 ozmushrooms

1 tspsalt
coarse black pepper
½ tspdried oregano
½ tspdried thyme
0.75 CUPricotta cheese
plus 1 Tbsp
1 cupheavy cream
1 heaping cupcottage cheese
1 ¼ cupsshredded mozzarella cheese
7 ozfeta cheese
shredded or crumbled
parmesan cheese
for sprinkling
fresh basil leaves
Instructions
Step 1
Preheat oven to 400°F.
Step 2
Prepare lasagna to al dente according to package instructions.
Step 3
Heat olive oil in a sauté pan over medium heat.
Step 4
Add mushrooms; sauté until soft, about 12 minutes.
Step 5
Season with salt, pepper, oregano, and thyme.
Step 6
Remove from heat.
Step 7
Add ricotta cheese, heavy cream, cottage cheese, mozzarella, and feta.
Step 8
Cover the bottom of an 8 x 8-inch or 9 x 13-inch baking pan with a layer of lasagna sheets.
Step 9
Cover with half the mushroom-cheese mixture.
Step 10
Top with an additional layer of lasagna and the remaining cheese mixture.
Step 11
Top with a final layer of lasagna.
Step 12
Cover and bake for 1 hour, until lasagna is firm.
Step 13
Uncover; top with fresh basil and a generous sprinkling of Parmesan.
Step 14
Bake for an additional 5 minutes, until cheese is crisp.
Step 15
Serve warm.
