12 ozcanned salmon
1egg
1lemon
2 tablespoonsmayo
½ cupseasoned panko breadcrumbs
plus more to coat
salt
½ cupwhole milk yogurt
1 tspextra virgin olive oil
granulated garlic

Step 1
Drain and flake salmon.
Step 2
Add egg, salt, zest of the lemon, juice of half the lemon, and mayo.
Step 3
Add breadcrumbs to bind, just until it holds together.
Step 4
Form into 12 patties.
Step 5
Coat each patty in additional breadcrumbs and press to adhere.
Step 6
Heat light olive oil in the largest frying pan over the largest burner set to heat 4 (let it fully come to temp).
Step 7
Fry in two batches, 5–6 minutes per side (or until golden brown).
Step 8
Drain on paper towels (keep warm in toaster oven if necessary).
Step 9
Combine remaining lemon juice, garlic, extra virgin olive oil, and yogurt to create sauce.
