Ingredients

18 ouncessirloin steak
cut into strips or cubes
1red onion
chopped into chunky slices
2tomatoes
chopped into 8 slices
1ají amarillo chili pepper
sliced finely, veins and seeds removed, or add 1 tablespoon of aji amarillo paste
1 Tbspgarlic paste
fresh
2 TbspOlive oil
20 ounceswhite rice
cooked

½ cupbeef stock
4 Tbspsoy sauce
4 Tbspred wine vinegar
cilantro leaves

Instructions
Step 1
Cut the sirloin steak into strips or cubes. Marinate them in the cumin, salt, red wine vinegar, olive oil, black pepper and soy sauce for 1 hour before cooking.
Can also add garlic paste to taste and a little bit of Aji Amarillo paste to taste
Step 2
Cook fries using instructions on bag, I usually use the air fryer for the most crispy fries

Step 3
Bring a tablespoon of olive oil to a very high heat in a wok. Strain and remove the steak strips from the marinade, and fry them over a high heat for around 4-5 minutes or untilsealed.

Step 4
Add the onion, ají amarillo chilli pepper and the garlic paste to the wok. Fry for 1 minute whilst continuously moving the wok, and add the beef stock.
Step 5
Add the tomato and fry the ingredients in the wok for 30 seconds. Finally add the ground oregano and French fries, tossing everything together for another 10 seconds in order to integrate all the ingredients.
Step 6
Serve immediately with rice or arroz chaufa
