Nando’s Chicken Crunch Wrap
Serves 2 - 660 calories per crunchwrap

This is my all time favourite new crunch wrap, definitely think Nando’s need to add this to the menu right away. Let me know if you make it!!

Ingredients

Ingredients - Chicken Mixture
200graw chicken breast
0.5brown onion
medium
0.5orange bell pepper
40gPeri Peri Sauce
¼ tspsalt
¼ tsppepper
½ tspgarlic powder
½ tspground cumin
½ tspItalian mixed herbs

Ingredients - Crunch Wrap
Instructions
Step 1
Start by thinly slicing the bell pepper, brown onion and chicken breast.
Step 2
Place into a mixing bowl with all of the seasonings and your favourite Nando’s sauce.
Step 3
Mix until fully combined and then use straight away if you’re impatient or cover and leave to marinate for 30 mins in the fridge if you have time.
Step 4
In the mean time, prep any of your salad veg (lettuce, red onion and tomatoes) and if you don’t have any small wraps cut 1 of the large wraps into two smaller wraps. You can make any leftover wrap pieces into tortilla chips as to not waste food.
Step 5
Heat a frying pan on medium high and spray in some cooking spray.
Step 6
Add in the marinated chicken and veg mixture and stirring and fry for around 5 mins until cooked through and charred.
Step 7
In the meantime, make the Perinaise by mixing together the light mayonnaise and peri peri seasoning until combined (feel free to use Nando’s Perinaise if you prefer)
Step 8
Assemble each crunch wrap starting with laying down a wrap first, then spoon on half of the mayonnaise mixture and spread out in a circle in the middle of the wrap.
Step 9
Then lay down half of the cooked chicken mixture on top of the mayonnaise, followed by 30g of the cheddar cheese.
Step 10
Then add on all of the salad components, I used some shredded Iceberg lettuce, quartered cherry tomatoes and diced red onion.
Step 11
Now spoon on small blobs of reduced fat soured cream and an additional drizzle of Nando’s sauce.
Step 12
Finally lay down 5 Doritos in a circle pointing into the middle of the wrap, before adding the small wrap on top.
Step 13
Heat the frying pan and spray in some cooking spray.
Step 14
Now fold in the edges of the large wrap on top of the smaller wrap to enclose the whole crunch wrap, and then place down in hot pan with the folded edges down to seal everything in side.
Step 15
Flip after a few mins and repeat on the other side so both sides are golden and crispy.
Step 16
Repeat the wrap building and sealing in the pan process for the other wrap.
