Step 1
Slice the chorizo ring and the jarred red peppers, finely chop the garlic clove.
Step 2
Melt the butter in a frying pan over a medium to high heat. Once bubbling, chuck in the chorizo. Fry for around 4 minutes, turning occasionally, until crisp.
Step 3
Add the garlic and chipotle paste to the pan. Cook, stirring, for 1 minute then tip in the chopped tomatoes and mixed beans. Season with salt and pepper and leave to bubble away for 5 minutes.
Step 4
Come back to the stew, drop the kale and sliced red peppers into the pan. Cook for a minute or two until the kale has wilted, then dish up the stew.
