Spaghetti with Roasted Brussels Sprouts & Lemon

Brussels sprouts transform when roasted into golden, crispy goodies. I like to roast them with a halved head of garlic so you get the squishy caramelised garlic cloves to have with them. Serve with a quick carbonara pasta for a deliciously easy weeknight pasta.

Instructions
Step 1
Preheat the oven to 180oC/160oC fan/ 350oF.
Step 2
Remove the base and any dirty outer leaves of the Brussels sprouts. Cut the sprouts in half and toss onto a large baking tray or roasting dish. Cut the garlic bulb in half along its equator, place onto the baking tray. Cut a lemon into quarters and toss onto the baking tray too. Drizzle with the olive oil then sprinkle with salt and pepper. Mix together using your hands to coat everything in the oil and seasonings.
Step 3
Roast for 20 minutes then remove from the oven and scatter on the almonds. Roast for a further 5-10 minutes until the almonds have started to colour and smell toasty.
Step 4
Remove from the oven, squeeze over the lemon juice (careful – it’ll be HOT! I use tongs or a lemon squeezer to do this). Sprinkle with the parmesan. Squeeze out all of the cloves of garlic onto the tray, discarding the papery skin.
Step 5
Cook the spaghetti in a large pot of salted boiling water until al dente, according to the time on the packet. Reserve some of the pasta water then drain the spaghetti.
Step 6
Mix the egg yolks and grated parmesan in a large bowl, season with a pinch of salt and pepper. Pour in a splash of the pasta water and quickly stir it in. Add the hot spaghetti to the mixture and toss to coat in the sauce, loosening with more pasta water as needed.
Step 7
Divide the saucy pasta between two bowls, top with the roasted sprouts etc from the tray and serve.
