This can be used for any fish. For this recipe, I am using lake perch. Makes 8- 4oz servings

Step 1
Preheat oven to 350 F
OvenPreheat

Mix dry herbs and seasoning(except pepper) in a bowl, set aside
Spoon
Step 3
Spray a 9" x 11" x 2" pan with olive oil
Step 4
Layer bottom of pan with sliced onion
Baking dish
Step 5
Baste enough fish fillets with melted butter on both sides to cover onion layer and place in pan
Cooking Brush
Step 6
Sprinkle with herb/spice mix, add pepper if desired
Step 7
Repeat process, may end with fish or onion on top
Step 8
Cover with foil
Step 9
Cook for 15-30 minutes or until fish flakes easily (internal temp. 145 F)
