Instructions

Step 1
Slice the chicken breast in half horizontally to create 4 thin cutlets. Use a mallet to pound each cutlet to a 1/4-inch thickness. Season all over with the salt and pepper to taste.
Step 2
In a small bowl, combine the mayonnaise and Parmesan. Spread the mixture over both sides of the chicken.
Step 3
Working in batches if needed, place the chicken in the air fryer basket in a single layer. Cook at 380*f for 4 minutes. Flip the chicken and top with the tomatoes and mozzarella inside the basket. Continue to cook until the cheese has melted and the chicken is cooked through, 2-3 minutes more.
Step 4
Transfer the chicken to the plate and drizzle with the balsamic glaze if desired. Garnish with the basil.
Step 5
Oven instructions: Broil. Cook inches from the flame for 5 minutes. Flip and cook for 2 minutes more. Add the cheese and cook for 1-2 minutes to melt.
