Ingredients
4 servings
2chicken breasts
1 tablespoonground cumin
1 teaspoonsmoked paprika
0.5lemon
roughly chopped
3 tablespoonsolive oil
100 grcherry tomatoes
quartered
1avocado
diced
0.5 headiceberg lettuce shredded
1 cupcucumber
sliced
50mlextra virgin olive oil
salt
pepper
½ cupcheddar cheese
grated
3 tablespoonsfresh corriander
roughly chopped
1juice of lemon
Instructions
Step 1
Combine the cumin and smoked paprika with the lemon and olive oil
Step 2
Rub the chicken breasts with the spice paste and season with salt & pepper
Step 3
Fry or BBQ the chicken breast for 8 minutes on each side
Step 4
Leave the chicken to cool down and cut into thin slices
Step 5
Mix everything but the chicken and cheese together.
Step 6
Dress the salad with lemon juice and olive oil and season to taste with salt & pepper.
Step 7
Dish the salad into bowls and top with sliced chicken and cover with the grated cheddar cheese
