Instructions
Step 1
Add the beef mince to a large bowl and season well with salt and pepper. Push the thyme of the stems and add in the cooked diced onion. With your hands, bind all the ingredients together.
Step 2
Separate the mixture into four and shape them into individual patties. Lay on a tray and allow it to firm up in the fridge.
Step 3
Meanwhile, add the bacon to a dry pan on medium and fry for 2-3 minutes on each side or until golden and crisp. Place on a plate lined with kitchen paper to remove any excess grease. Cover and set to one side.
Step 4
Add some oil to a frying pan and bring to a medium-high heat. Add the burgers and cook for 3-4 minute on each side or until beautifully browned. Top each burger with the cheddar cheese and splash a little water over them. Quickly place a lid over them to help the cheese melt.
Step 5
Halve the burger buns and lightly toast them in a dry pan.
Step 6
To serve, the burger buns are spread with red onion chutney, topped with curly lettuce, sliced tomato, the cheesy cooked beef burger, sliced red onion, crispy bacon and the brioche bun lid.
