Instructions
Step 1
Heat the oil in a large pan and fry the onion and garlic for a minute over a high heat. Stir in 3 tbsp curry paste and sizzle for another minute, then add the rinsed lentils and 1 tin chickpeas.
Step 2
Pour in coconut milk. The fill tin with water and add that too.
Step 3
Bring to boil and cook for 30 mins until lentils cooked
Step 4
Stir in spinach to wilt and add lemon juice
