Step 1
Mix ground beef, egg, salt, pepper, and green onion until well combined.

Mix rice into mixture

Form largish meatballs (~1.5 inch diameter)

Heat oil in dutch oven.

Add onion and carrot. Saute over medium high heat until softened.

Add peppers and garlic. Cook until peppers begin to soften.

Add tomatoes and chicken stock. Cook until simmering.
