150g5% fat beef mince
0.5red onion

120gred kidney beans

60ggrated mozzarella

Instructions
Step 1
1. Start by heating a frying pan and spraying with some low calorie cooking spray.
Step 2
2. Add in the lean beef mince and break apart with a spatula, frying for a few mins until browned.
Step 3
3. Then add the diced red onion and bell pepper into the pan.
Step 4
4. Stir round and then season with 1/2 tsp of salt, pepper, ground cumin, ground coriander, garlic granules, smoked paprika and hot cayenne pepper.
Step 5
5. Fry for around 4 mins until softened and then add in half a ton of rinsed, drained red kidney beans along with a splash of water.
Step 6
6. Stir that mixture round and simmer for around 4 mins until the water has reduced down.
Step 7
7. Once complete, grab a bowl and layer in the BBQ pop chips followed by the grated mozzarella.
Step 8
8. Then microwave for 20-30 seconds to melt the cheese.
Step 9
9. Then sprinkle over some sliced cherry tomatoes and sliced fresh chillies before spooning some blobs over low fat sour cream.
