Halloumi & tomato orzo 😚🤌🏻 this was absolutely delish! The orzo obsession is returning without a doubt 🤣 promise you won’t regret saving and trying this one team!!! Recipe makes 2 big portions!⁣ ⁣ Ingredients:⁣⁣⁣ 1 onion⁣⁣ 150g reduced fat halloumi⁣ 1 tbsp Italian herbs ⁣ 10 cherry tomatoes ⁣ 1 tbsp tomato purée⁣ 1 veg stock cube⁣ Salt and pepper 150g passata 225g orzo (dry weight)⁣ 60g light cream cheese⁣ 100g sundried toms⁣ Handful of spinach ⁣ ⁣⁣ Method:⁣ Cook the onion and halloumi in a pan with some frylight spray ⁣until softened and cooked through.⁣ Set aside some of the halloumi to pop on top at the end!⁣ Add the tomatoes and tomato purée and stir to coat.⁣⁣ Crumble a veg stock cube in then add enough water to coat everything and pour in your orzo.⁣⁣ Add some salt, bring to a simmer and cook for around 10 minutes. Keep adding more boiling water from the kettle as the pasta soaks it up.⁣⁣ Stir in your cream cheese, sundried tomatoes, some salt, pepper and mixed herbs and some spinach,⁣⁣ Stir for a couple more minutes until wilted, then serve up!⁣⁣ ⁣⁣⁣ For 1/2 of the recipe (could split into 3 for less hungry humans)⁣ Cals - 809 Carbs - 107g Fat - 21g⁣ Protein - 40g

Instructions

Step 1
Cook the onion and halloumi in a pan with some frylight spray until softened and cooked through. Set aside some of the halloumi to pop on top at the end!
Step 2
Add the tomatoes and tomato purée and stir to coat.
Step 3
Crumble a veg stock cube in then add enough water to coat everything and pour in your orzo.
Step 4
Add some salt, bring to a simmer and cook for around 10 minutes. Keep adding more boiling water from the kettle as the pasta soaks it up.
Step 5
Stir in your cream cheese, sundried tomatoes, some salt, pepper and mixed herbs and some spinach,
Step 6
Stir for a couple more minutes until wilted, then serve up!
