Instructions
Step 1
Boil water in a saucepan and add rice.
Step 2
Thinly chop carrot, pepper and dice half an onion.
Step 3
Put this in a Wok or frying pan on medium heat covered with light spray oil.
Step 4
Chop your chicken breast into small chunks and add to the pan 5 mins after the veg.
Step 5
When the chicken is almost cooked, turn down the heat and add in 2 tablespoons of light soy sauce, one tablespoon of apple cider vinegar and 2 teaspoons of honey.
Step 6
Put a lid on the pan and let this simmer on low heat for a few minutes.
Step 7
Put your rice in a bowl or plate and serve the chicken and veg over it and enjoy.
