For Potato salad
Instructions
Step 1
1. Mix together the oil, thyme, lemon zest, lemon juice and season. Toss with the chorizo, shallots and apple wedges then leave to marinate.
Step 2
2. Boil the potatoes in a pan of water for 15 mins until tender then drain. Trim and finely slice the spring onions, and finely chop the gherkins. Mix together in the crème fraîche and mayonnaise and fold in the onions and gherkins. Mix with the cooked potatoes.
Step 3
3. Thread the chorizo, shallots and red apples onto skewers, drizzle with any remaining marinade and grill for 10 mins, turning halfway through. Serve hot with the potato salad and a handful of fresh watercress.
