Instructions

Step 1
Put asparagus tips into small pot, just covering with water. Bring to a boil and steam for 6 minutes. Drain and set aside.
Step 2
Cook and then chop or crumble bacon. (Usually do it in two batches, 5 strips each on lots of paper towels).
Step 3
Heat EVOO in skillet and saute onion until it starts to soften.
Step 4
To a greased (I use Pam) 9-inch pie dish, add sautéed onion, 1/2 of the cooked and crumbled bacon, the asparagus, then the remaining 1/2 bacon. Top with 1 cup shredded Swiss cheese.
Step 5
In a large mixing bowl, beat the eggs, mustard, salt, and pepper. Melt the butter and stir into the egg mixture. Pour egg mixture over the contents of the pie dish.
Step 6
Bake at 425 F for 30 minutes, or until knife in center comes out clean.
Step 7
Serve with hash browns or tater tots. Steamed broccoli is a good alternative to the asparagus.
