Ingredients
28 servings
1bell pepper
large, color of choice
0.5yellow onion
medium, diced
2jalapeños
seeds removed & diced
2 tspminced garlic
2 lbsrotisserie chicken
shredded
2 tspground cumin
2 tspchili powder
½ tsppaprika
salt
to taste
pepper
to taste
1 ¼ cupshredded cheddar cheese
½ cupsalsa
I used the mirancho
28corn tortillas
I used the credible, organic corn tortillas
Instructions
Step 1
1. Preheat your oven to 400°F. Lina a large baking sheet with foil & set aside.

2. Heat up your olive oil in a large wok/skillet. Add your bell pepper, onion, jalapeños. Sauté for 2-3 minutes out until fragrant.
Step 3
3. Add in the chicken, spices, salsa, and cheese. Mix well and allow flavors to soak into the chicken and for the cheese to melt.
Step 4
4. In the meantime, line your tortillas on your baking sheet and lightly spray the tops with nonstick spray. Bake for 5-6 minutes, or until fully heated through and soft. This is key to rolling up your taquitos!
Step 5
5. Remove the tortillas, stack them up, and wrap them in foil to keep them warm.
Step 6
6. One at a time, fill your taquitos with the chicken mixture. Roll them up tightly and like them up on your baking sheet.
Step 7
7. Bake for 15 minutes and enjoy!
