Boil half a kettle
Step 3
Grate the cucumber
Step 4
Strip the mint leaves from their stems and chop them roughly, discard the stems

Cut the lemon[s] into wedges

Add the vegetable stock mix to a heatproof bowl with the sultanas, diced apricots and couscous

Add 250ml [500ml] boiled water, give everything a good mix up, cover and set aside for later – this is your fruity couscous

Add the natural yoghurt to a bowl with the grated cucumber and chopped mint

Add a drizzle of olive oil and the juice of 1 [2] lemon wedge[s] and stir it all together – this is your tzatziki

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Cut the halloumi into 6 [12] slices

Once hot, add the halloumi slices and cook for 1-2 min on each side or until golden

Whilst the halloumi is cooking, chop the dill roughly, including the stalks

Dice the tomatoes finely

Add the flaked almonds and chopped tomato to the fruity couscous with a generous drizzle of olive oil and the juice of 1 [2] lemon wedge[s] and fluff everything up with a fork

Serve the golden halloumi with the tzatziki and fruity couscous to the side

Garnish with the chopped dill and a lemon wedge
